Also for the flower on top of the pudding, you could use a “hyacinth flower” or as we Iranians call them “Sonbol flowers” which are used in the Haft-Seen table setting for the Persian New Year celebration, Nowruz, held at the spring equinox, I’m not sure if you can find this flower in your region though.

I think the pudding is supposed to be muhallebi (kinda custard) rather than made with gelatin since Sumeru takes inspiration from Middle East but still great!! Also most gelatin has pig in it and it’s haram here ahahaha so we don’t use that much gelatin in puddings (there are halal gelatins but not as common as haram gelatin)
