関西圏で、うどんが自家製面ってのはありそうだけど、蕎麦も自家製面って凄いな。。
こだわりというより、職人としてのプライドを感じますね。
うどん屋さんのカレーうどんって本当に旨いんですよね。私も幼き頃によく出前だったり来店だったりで食べました。。

ゆっくり染ませるか、サクサクのカツに調味料かけて&卵部分を別として味わうか、客の食べ方次第でどうにでも楽しめますね

So much time and labor just for cooking fried rice! No wonder it cost $6.50 per serving! It is a hard job doing it alone everyday, making individual orders.
so far, this is the most crowded kitchen i’ve seen in the channel. from uncommon meat storage (3:44) to the floored ice bucket (5:28).
but the food looks great and well prepared.

what i love abt japanese food etiqutte is zero wastage of food . they appreciate the food and hardwork of who made it VS in west where leaving a little food on plate is seen as good nt looking self as food gobbler bt so mich of food is wasted clearly they lack right culture

うどんの【茹でる】【ぬめり取り洗い】【冷水で締める】【再度温める】の手間の掛け具合が凄い。ツルりもっちりの次元が高そう。タレを後で掛けるタイプのカツ丼を初めてみました。サクサク感があって美味しそうです。

That katsudon, port cutlet on rice, is one premium meal thought it looks simple.
It’s only well served in Japan with a bowl of soup. Comfort foods. The fried rice and curry udon are top notch.
This is what we called: Ryori no tatsujin!!

All of the recipes really look delicious. I fix Katsudon once in a while because of the combination of ingredients and his looks amazing. I will be fixing it again. But when I fix breaded pork cutlet (Tonkatsu) I never liked the juices soaking up in my breading. But this chef which I really enjoyed watching gave me an idea on my own Katsudon after seeing how delicious and nicely plated his looks.

I guarantee if anyone starts a Japanese DON(one bowl food) shop in your town , that person will make a fortune. Especially Katsudon is a King menu.
Never forget the DASHI , dry bonito soup.
In Japan there’s Don shops everywhere but people are grown with the Japanese soup stock . So it’s a high level market in Japan. But at other countries I believe it’s more easy. If you just don’t forget to learn how to make a good DASHI !
