婆婆又来咯~今天婆婆要和大家分享一道平时新年在酒楼很常见的新年料理——东坡肉!
是不是平时吃东坡肉觉得很好吃但想在家做又感觉制作起来很难叻!没关系!跟随婆婆凹大man的脚步,教你煮出和酒楼差不多等级的东坡肉!煮东坡肉切记:一定要慢火炖煮,这样才能让肉质有入口即化的口感,如果让长时间以大火去炖煮,会让猪肉粗糙,难以入口!味道完全是根据个人喜好去调配,如果喜欢咸一些,酱油就放多一些;喜欢甜一些,冰糖就放多一些!最后再放入几颗水煮小白菜作为摆盘,是不是十足似酒楼菜啊!
材料 Ingredients:
-1公斤的五花肉 1kg of pork belly
-1块姜 1 pieces of ginger
-半碗料酒 half bowl of cooking wine
*小火煮一小时
-两瓣蒜米 2 clove of garlic
-两粒八角 2-star anise
-一个半的桂皮 1 and ½ cinnamon
-适量的冰糖 some rock sugar
-半碗酱油half bowl of soy sauce
-一汤匙半的黑酱油 1 and ½ tbsp of dark soy sauce
-半碗料酒 half bowl of cooking wine
-适量的姜片和青葱(铺底)some ginger slide and green onion (make the bottom)

HappyMoi, I have a request, could you ask your grandma ; whether she knows the recipe for ching tong soup (clear soup) of the 60’s and 70’s?
Usually in those day, the noodle sellers come in their bicycle cart, customers could select mee and bee hoon ching tong or curry laksa.
That soup flavor could not be found today, but the curry laksa you can still find in some shops today.
